CANDIED YAMS
INGREDIENTS

2 pounds of sweet potatoes

6 cups of cool water

½ cup of water
-
½ cup of unsalted butter
-
½ cup of brown sugar
-
½ cup of granulated sugar
-
2 teaspoons of ground cinnamon
-
½ teaspoon of nutmeg
-
1 tablespoon of vanilla extract
Directions

Peel the skin from the yams
-
Then put in a medium pot over medium heat
-
Let the water boil for about 6 min this will ensure the yams will get a great cooking start

Atter 6 min put the yams into to the pot

Then after 20 minutes (ensure yams are tender) pour some of the water out of the pot so that you are left with only 2 cups of water.

Then add ½ stick if butter cut into ½ squares.

Let this simmer on low for 2 min then add half of all the rest of the ingredients and simmer for 2 minutes more

After 2 minutes add the rest of the ingredients around in the pot sprinkling them on top one at a time evenly.

Stirring the liquid in the pot occasionally until the cooking liquid reduces this can take about 10 minute or so or until the syrup coats the yams.

Then depending on your preference you can remove candied yams from the pot and place them in a baking dish and place marshmallows and sprinkles of nutmeg on top.
